Pierre DAMOY has been responsible for this impressive estate since July 1992, when he took over production from his uncle. Pierre found himself at the helm of what is indeed one of the jewels of the Côte d’Or: 25 acres of vines, 75% of which lie in 3 of the most esteemed Grands Crus in Burgundy. the Domaine owns 45% of the magnificent Clos de Bèze growth and almost half of Chapelle-Chambertin.
Viti/Viniculture : Formerly an agricultural researcher, Pierre possesses a studied understanding the dynamics of the vineyard. He generally favors a manual approach, including ploughing, and uses no herbicides. Prior to fermenting, grapes undergo a maceration of 4 - 7 days at approximately 15°C ; fermentation lasts 10 - 15 days in open vats, with caps punched down three times a day. The wines are matured in 2/3rds new oak; for the most part in small Allier casks along with a few Tronçais barrels. Bottling takes place at the domaine without fining or filtering.
In 1997, the estate press-house was thoroughly modernized and all equipment is state-of-the-art.
