Côte de Beaune

Since 1998 , Geneviève BONIN née MICHELOT and her daughter Véronique have been running this Estate along with the latter’s husband , Nicolas BERNARD . They own and cultivate 7 hectares (17 1/2 acres) comprising vineyards in the white Burgundy appellations of Meursault , Meursault 1er Cru and Puligny-Montrachet 1er Cru . The first vintage was 1999 and the intention is to follow time-honoured tradition and ensure the wines display the quintessential concentration of terroir . All the vines are old but it is difficult to give an average age since a number of plots are replanted every year while each “terroir” is vinified separately, respecting the "lieux-dits", the names of which appear on the labels.

When pressing the grapes , the gentlest pressure is used in order to obtain the purest but richest juice . Furthermore , throughout ageing in cask , each individual cask is sampled to determine precisely when the lees are to be stirred to attain an optimum exchange between the wine and its sediment . The wines are slowly imbued with heightened richness and only after 18 months will the wines be separated for the first time from the lees that suckled them . In addition , racking is synchronised with the lunar phases when the wine is naturally limpid and stable thus avoiding fining and filtration . The wine can therefore mature calmly and unhurriedly in bottle on the microsediment that will develop naturally .
