Domaine Sylvain MOSNIER

They don’t come more genuine than barrel-chested Sylvain . Even if his booming voice can be heard from one end of his native village of Beines to the other , he always has a wry chuckle and a wink to welcome you . Since 2005 he has been joined by his daughter Stéphanie who shares his drive and desire to produce authentic , pure Chablis .

His Domaine comprises 13 hectares ( 20 acres) including 11 hectares of Chablis and 2 hectares of 1ers Cru . He will tell you immediately that he is not a fan of wood with his Chablis . Hence , the stainless steel and enamel tanks that abound in his spotless modern vinification facility lying in the middle of the vines . Sylvain carries this preference for zing and freshness through - bottling after a year or even in the Spring following the Harvest .

Typically , his vineyard soils are clay and limestone overlying a kimmeridgian limestone subsoil – the key to the inimitable steely flintiness of Chablis . The orientation is south south east .

Petit Chablis : Colour : Typical green/silver / Bouquet / attractive flinty fruit / Bouquet : good weight and flesh

Chablis AC : from Beines Production 30 000 bottles Colour : Green/silver /Bouquet : stylish freshness more “marine” nose ; whiff of lanolin / Palate medium weight with mouthwatering acidity – “upright “ palate

Chablis AC Vieilles Vignes : Beines Production 10 000 bottles Colour Green/gold / Bouquet : wet stones-ripe greengage nose /Palate very dense and rich with steely acidity and a long , concentrated flinty finish

Chablis 1er Cru Beauroy : Production 8 000 bottles Colour Green/gold /Bouquet : stylish fruit on a chalky backdrop / Palate : quite loose knit and easy palate which floats towards the fresh, zingy finish.

Chablis 1er Cru Côte de Lechet : from Chablis Production 4 500 bottles Colour Green/gold /Bouquet : a ripe almost creamy appeal on the nose / Palate good weight
and flesh ; concentrated , ripe finale
